Also called the bavette, the boneless flank steak is a long and thin cut that is often marinated to tenderize. There are a myriad of recipes available for flank steak, and this cut has seen a recent spike in popularity in the US. Flank steaks are very flavorful, and their flat dimensions are like a canvas to experiment with new recipes. One steak approx 10 oz.
